Chefs and gourmet sandwich shops ... a new trend?

These days, chefs and gourmet sandwich shops are a sure-shot recipe for success. I mean, who in their right mind doesn’t like high quality seasonal ingredients thoughtfully piled on artisan-baked breads? And with this concept chefs are able to showcase at least some creativity while hearing that comforting sound of a busy cash register. Cha-ching!

Owners, Chris Gatti and wife Anna, are inspirational chefs as well as sharp business folks. Canvas relies heavily on nearby Wellstar Kennestone Hospital traffic, an area bursting with lunch business but a decent meal is hard to come by – that was until the recent arrival of team Gatti.

An ethereal meatball sub is just as the menu states, largely because the meatballs are properly constructed with all three meats – pork, veal and beef. Also, with the slightest hint of Parmesan. Why does it take a chef to create a proper meatball in this town?

Paninis here are served warm and crusty, hot off the press. The foraged mushroom and onion panini arrives wearing goat cheese and a judicious spattering of truffle oil.

Meanwhile, the scanty Prosciutto e Mozzeralla is a poor choice. I agree that the Prosciutto di Parma offered is quality stuff, but the crusty Italian farm bread overwhelms the skimpy portion. Lose it.

There are too many worthwhile sandwiches to be had here. For example, Phillipa’s Sausage and Peppers – the slow roasted Italian sausage itself is nearly worth killing for.

And The Casa Grande, which is basically chef Chris’ epicurean version of the Cuban sandwich, is a grubbers wet dream. Prepare yourself, there’s a lot going on with this one – from the juicy coriander-roasted pork to the horseradish-like kick of the grainy mustard, and from the shaved Serrano to the elastic chunks of milky queso blanco. Keep it.

Nobody, and I mean absolutely not a single soul exits the building without a little something from Anna’s pastry case. Freshly baked Cookies are the size of a head and Blueberry Sour Muffins are dense and moist.

I need one of those insanely addictive Shaker Lemon Bars, like now.

...and maybe one of those scones.
