A: Redfish is still in its infancy, and it takes time to develop cooks and wait staff. Tiburon Grille and Taste of New Orleans had personnel that had been there for years. I am very fortunate to have partnered with Jack Sobel at Redfish; he alleviates a lot of the behind-the-scene pressures of operating a restaurant on a daily basis, giving me the opportunity to spend more time in the kitchen. Redfish has already grown more than we could ever have expected in the short time it has been open.
